How To Make Buckwheat Pancakes with Blueberries

Ingredients :

1 cup all-purpose flour
1 cup buckwheat flour
1 Tbsp. baking powder
1 cup buttermilk
2 medium eggs
2 Tbsp. powdered sugar
2 Tbsp. butter, melted
1 cup blueberries

How To Make it :

1. Sift the all-purpose flour, buckwheat flour, powdered sugar, and baking
powder into a large bowl. Make a well in the center.

2. Whisk together the buttermilk and egg in a separate bowl then gradually add
into the flour mixture, stirring until smooth. Fold the blueberries into the batter.

3. Brush a medium non-stick pan with melted butter and place over medium
heat. Pour ¼ cup of batter into the pan. Cook for 1-2 minutes or until bubbles
appear on the surface. Flip over and cook further 1-2 minutes or until golden on
both sides. Transfer to a plate and cover with a clean kitchen towel to keep
warm. Repeat procedure with the remaining batter.

4. Divide pancakes onto 4 individual plates. Garnish with some blueberries and
drizzle with honey, if desired
