Ingredients :

1 cup all-purpose flour
1 cup buckwheat flour
1 ½ Tbsp. baking powder
½ tsp. cinnamon, ground
1 cup buttermilk
2 medium eggs
2 Tbsp. pure maple syrup
2 Tbsp. butter, melted
Greek yogurt, to serve

How To Make it :

1. Sift the all-purpose flour, buckwheat flour, baking powder, and cinnamon into
a large bowl. Make a well in the center.

2. Whisk together the buttermilk, egg and maple syrup in a separate bowl then
gradually add into the flour mixture, stirring until smooth.

3. Brush a medium non-stick pan with melted butter and place over medium
heat. Pour ¼ cup of batter into the pan. Cook for 1-2 minutes or until bubbles
appear on the surface. Flip over and cook further 1-2 minutes or until golden on
both sides. Transfer to a plate and cover with a clean kitchen towel to keep
warm. Repeat procedure with the remaining batter.

4. Divide pancakes onto 4 individual plates, top with a dollop of Greek yogurt
and serve immediately.
