Indulge in something delicious and nutritious with these wonderful pancakes made with buckwheat, cinnamon, and yogurt.
- 1 cup all-purpose flour
- 1 cup buckwheat flour
- 1 1⁄2 Tbsp. baking powder
- 1⁄2 tsp. cinnamon, ground
- 1 cup buttermilk
- 2 medium eggs
- 2 Tbsp. pure maple syrup
- 2 Tbsp. butter, melted
- Greek yogurt, to serve
HOW TO MAKE PANCAKE
① – Sift the all-purpose flour, buckwheat flour, baking powder, and cinnamon into a large bowl. Make a well in the center.
② – Whisk together the buttermilk, egg and maple syrup in a separate bowl then gradually add into the flour mixture, stirring until smooth.
③ – Brush a medium non-stick pan with melted butter and place over medium heat. Pour 1⁄4 cup of batter into the pan. Cook for 1-2 minutes or until bubbles appear on the surface. Flip over and cook further 1-2 minutes or until golden on both sides. Transfer to a plate and cover with a clean kitchen towel to keep warm. Repeat procedure with the remaining batter.
④ – Divide pancakes onto 4 individual plates, top with a dollop of Greek yogurt and serve immediately.
